I don't see why that's necessary, as long as you rename /usr/X11R6 to
something else so the binaries and libraries will not be in the search
path. I just checked the results of my plain-vanilla, no defaults
changed build of 6.82 last fall and everything... EVERYTHING went
into /usr/X11R6 with the exception of a couple of directories and
libraries that are symbolic links into the appropriate /usr/X11R6
location. So if I move that folder to a safe place, a new build of
Xorg7 whould not conflict with the hidden files in any way.

I'm going to try it this weekend, if I have the time, and I'll report
any problems with the CVS instructions or conflicts with my existing
6.82 build.
